I assume you want to setup a user that will transfer the data without transcoding ... based on that assumption:
You can make 'pass' the default configuration: Configuration / Stream / Stream Profile --> select 'pass' and on the right side check the setting "General Settings / Default: "
Or
You can for a particular profile selection from client ... I can't help you here because each client different. Search for 'profile' setting in your client and type 'pass'
