It depends on what grabber you use, and on what source tv_grab uses.
I use tv_grab_nl.py . There you can there (externally) add the option --days to the tv_grab_nl.py command.
( see tv_grab.py --help ) .
I do not think you can add the commandline-option in tvheadend , so you might want to run is using cron.
However, the source it takes its info from in my case only has data available for three days......
So better first check from the commandline how much data is available.
